The best wine-truffle pairings
Have you thought about which wine to serve with truffle? Not every wine enhances its flavor, even sparkling wine can be a good pairing in some cases.
Is it better to pair truffle with white wine or red wine?
White truffle and black truffle require different wines, the regional ones are often excellent. But let’s start with sparkling wines.
This rule applies to all types of wines, not just sparkling wines: the flavor must not be too strong, because of the delicate character of this kind of truffle. So, we prefer those wines rich in aromas, elegant, persistent, but without being too heavy. Sparkling wines are a perfect match when there’s a fat component in the dish. Sparkling wines that have fermented for a long time on yeasts and that are characterized by greater creaminess and less acidity are fine: the Italian classic but also champagne.
The sparkling and long refined wines “classic method” have mannoproteins, glycerin, fatty acids and baking perfumes that will pair perfectly with truffles. The pungent effervescence of less evolved sparkling or Charmat method could instead cover the taste of the truffle.
Like we said at the beginning, the most correct pairing is the wine from the region of the truffle. Let’s see how it works and then let’s find out which are the wines that best pair with the black or the white tuber.
Black and white truffle: which wine to pair
The white truffle of Alba pairs best with the Alta Langa Classic Method. On the contrary, the black truffle of Norcia requests white and red wines that can enhance the best qualities of this gem of aromas and taste. In this case, we can choose a scented white wine, of good length and structure, balanced in freshness and acidity, soft at taste. In this case, Vernaccia di San Gimignano Riserva, Verdicchio dei Castelli di Jesi Classico Riserva, Riesling or Muller Thurgau are the rightchoice.
As for the black truffle, once again, the best red wines are Montalcino, Nebbiolo delle Langhe or Pinot Noir del Mugello. If black truffle is paired with meat dishes, it is better to choose between Montepulciano d ‘Abruzzo, Cesanese del Piglio, Aglianico del Vulture or Barbaresco.
Now let’s move on to white truffle. With eggs, choose a classic method sparkling wine like Alta Langa, Franciacorta Satén, Trento Doc and Champagne Blanc de Blancs.
If you’re eating truffle with egg pasta, the Piedmontese white wines are excellent. For example, Roero Arneis and Gavi, or Nascetta and ColliTortonesiTimorasso.
And again: Verdicchiodei Castelli di Jesi Classico Superiore, a Chardonnay like those of the Karst region or the Langhe; finally, the Riesling of Oltrepò Pavese.
If the white truffle accompanies the meat, served raw, the best combinations are Barbera d ‘Alba, Dolcetto d ‘Alba or Chardonnay delle Langhe. If the white truffle is cooked with a fondue, a fillet of beef or wildfowl, then Barbaresco, Vino Nobile from Montepulciano, Pinot Noir from South Tyrol or Barolo are the rightchoice.
