Truffle, the most exquisite ingredient in the world, enhances risotto, lasagne or ravioli with its unique aroma and its tasty flavour.
Truffle is a precious ingredient, and it can be cooked in many ways. Today we’re going to show you the best first dishes cooked with this aromatic tuber.
The first recipe is Truffle risotto, an easy but a bit expensive recipe. It’s the right choice for your special occasions. All you need is a risotto alla parmigiana. Stir the rice with broth and then stir it with butter and Parmesan cheese, add black truffle slices and put them directly on the risotto.
Another mouth-watering pasta dish is green lasagna with potatoes and truffles. This dish can be prepared in advance and heated in the oven when guests arrive. Start by peeling, washing and thinly slicing the potatoes, then soakthem in cold water. Add a handful of salt in the pan with boiling water, add the potatoes, cook for five minutes and drain slowly. Roll out the potatoesand let them cool on a sheet of baking paper. Meanwhile, clean the truffles, remove the outside, slice it and finely chop it. Melt the crescenza cheese with milk, truffle, and robiola and add salt.
Prepare egg pasta following the basic recipe.Remember to prepare the dough with crescione or spinach. Roll out the dough into sheets and cut the lasagna. You need to cut10×15 cm rectangles; soak lasagna in salted boiling water, drain and letit dry on baking paper.Butter the oven pan and lay out a wet and squeezed sheet of baking paper. Create layers with your lasagna sheets, overlapping them slightly with each other. Finish it all with a layer of cream cheese, Parmesan cheese and preheat the ovenup to 180° for 35 minutes. Allow your lasagna to rest for 5 minutes before taking it out of the oven and then serve it.

In order to make the dough mix the flour with the eggs and a pinch of salt, let it rest for half an hour.
Meanwhile, prepare the filling: mix sifted ricotta with grated Parmesan cheese, egg, two pinches of nutmeg, one pinch of salt and one pinch of pepper. Roll the dough into thin sheets, on one half distribute the filling. Fold over the other half of the sheet, press with fingers around the filling, cut out the ravioli and pinch well the edges. Boil the ravioli and season with bain-marie melted butter and shaved truffle.
